
I don’t know about you guys, but I love a fresh scone!
I run the risk of sounding silly by saying this, but being completely honest … i’m not entirely sure I knew potato scones were ‘a thing’ until I came across them whilst researching recipes online.
I found these potato scones online and wondered how I could adapt them for Harry… I removed the brown sugar, used sweet potato instead of regular potatoes and added banana for extra sweetness/flavour and they came out better than I had hoped!
You can make these bite sized banana and sweet potato scones by following just 3 simple steps in less than 20 minutes!
Ingredients
1 Banana
1 cup of soft cooked sweet potato
50g softened butter
1 cup of self raising flour
1 egg
Method
- Mix everything in a medium mixing bowl.




2. Spoon onto a lined, grease proof baking tray or into cake cases.


3. Bake at 180 degrees for 15 minutes.
