
A muffin for breakfast? Yes please!?
I have seen many variations of a Weetabix breakfast online; soaked biscuits, cold milk, warm milk, bars, flavoured…. muffins- why not?!
You may have noticed a pattern on this blog… quick/simple/easy is how I like to do things- what toddler mummy doesn’t? So like most other recipes I have shared so far, these breakfast muffins are very simply made and in no time at all- WINNING!
Ingredients
– 2 crushed weetabix biscuits
– 40g oats (I blitzed ours to avoid a texture issue- this is optional)
– 80g self raising flour
– 1/2 tsp baking powder
– 2 eggs
– 150ml milk
– 2 generous spoonfuls of peanut butter
– A good squeeze of honey (not for under 1’s)
– 1/2 mashed banana
Method
Add crushed Weetabix, oats & milk to a medium sized mixing bowl- making sure the weetabix is fully soaked with the milk.



Add the rest of the ingredients and mix together well.



Spoon an even amount of the mixture into each cake case.


Bake at 180 degrees for around 15/20 minutes.


Inspiration taken from a great weaning friendly instagram page that I follow- Weaning Sienna. You will see that Weaning Sienna’s post uses berries instead of banana, I chose bananas as they’re Harrys favourite fruit. You can mix things up and use what ever fruit your little one would enjoy too!
